The 3 flag button on the bottom right of the interface (above all the stats) is used for making armies. Not sure if you can use it if you`re not part of a kingdom or have more than 1 party. Hovering over the flags before creating a kingdom just says "You need to be part of a kingdom."

However, what I ended up doing was just building an army of about 50% top tier archers and 50% top tier infantry and I was able to roll over castles with twice as many defenders as attackers. It would really be difficult to say whether or not Bannerlord's kingdom management and diplomacy mechanics could really support such a "Start." It's pretty borked, right now It also takes a good bit away from "progression." Bannerlord is built for a much longer playthrough experience than Warband.
